Whole30 Approved Cilantro Lime {Cauli} Rice

If you’ve been doing Whole30 long, you’ve probably figured out that it’s kinda sad that you can’t have rice while doing a round of Whole30. Or at least I felt that way about a week into my first round. If I’d known about this {Cauli} Rice sooner I would have made some type of mexican food about every other day. It’s alllllll veggies and good by itself, as a a side, or piled with a bunch of stuff on top. {Which is how we eat it most times.} I prefer this over real rice now and my kids call it couscous. Whatever works kids. They devour it like its the real stuff from one of our favorite restaurants that starts with Chip and ends with Otle.

Whole30 Approved Cilantro Lime {Cauli} Rice
Serves: 3-4 servings
  • 1 Large head of Cauliflower {or two small}
  • 3-4 Tablespoons of Avocado oil
  • 1 Teaspoon of Salt {more or less to taste}
  • 1 Handful of Cilantro, chopped
  • Juice from one large Lime
  1. Rough chop cauliflower and fill food processor {or Ninja like I use} ⅔ full.
  2. Pulse until cauliflower resembles rice and pour into large sauce pan.
  3. Repeat steps one and two until all cauliflower is chopped.
  4. Add oil to cauliflower in pan and toss to coat.
  5. Simmer with the lid on for 10-15 minutes, stirring every few minutes to ensure even cooking.
  6. Once done, remove from heat and add lime juice, salt and cilantro.
  7. Toss to combine all ingredients.
  8. Enjoy!

    Oh my goodness! This recipe is So good! I will take a picture of my leftovers tonight but there is hardly any left and it was just me eating it!😂
