Sweet Potato Smoothie

I’ve been on a big smoothie kick lately. It seems to be the best way to really hit those macros early in the day. I love eggs {and I’m not willing to only eat egg whites, so when I do eat eggs I seem to always go over on my fats for the day.} I know with a smoothie that I can get in  my protein and carbs and keep fat low.

So, I thought I’d share another smoothie recipe with you guys that I’m loving these days. Like my other smoothies, this one can be adjusted to fit your preferences.

Sweet Potato Smoothie
  • 6 Ounces of Frozen, Pre-Cooked Sweet Potato {Read below for info on how I cook mine.}
  • 1 Cup of Frozen Mango
  • 1 Frozen Banana {4.2 ounces- I break mine into chunks before freezing to get the right amount}
  • 2 Scoops of Vital Proteins Collagen Peptides
  • 1 Cup of Almond Milk {I use Califia Farms Toasted Coconut Almond Milk}
  • Water
  1. Combine all ingredients into a large blender and blend on high- adding a little water at a time until desired consistency is reached.
  2. Enjoy with a big fat straw!

HERE is where you can find info on the protein powder that I use. I have been very happy with this product- it’s Whole30 approved with no weird ingredients like most protein powders.

How to VERY EASILY cook sweet potatoes {or any other type of potato}:

Scrub them, throw them into your crockpot, turn it on low, cover with the lid, and cook all day- 8 hours will do the trick! These potatoes have the best flavor. Plus, this is the easiest way to prep potatoes for your week. SO easy! No need to wrap in foil, poke or add water. It works, I promise.

Here’s the crockpot that I use and love.

After my potatoes are done I give them a little time to cool and then I scoop out the inside and then put them in little ice trays like THESE to be able to store them in the freezer in a zip lock baggie. This way they’re easy to quickly grab for this smoothie recipe. Each cube holds about 3 ounces of sweet potato.

HERE are the giant straws that I use- I love a thick smoothie so regular straws won’t cut it. These are bomb.

Lastly, HERE’S the blender that I use. I love this thing. It makes the creamiest smoothies. Maybe one day I’ll have a Vitamix, but for now, and for the price, this one works GREAT.
