Cherry Banana Egg Waffles

My kids were making waffles yesterday morning and I wanted some baaaad. But I knew if I had a stack of them I would feel sluggish and yucky all morning. So I whipped up this little clean treat and it was DELISH. Perfect Saturday morning breakfast. I used cherries and bananas but you could use other combinations of fruit too.

Cherry Banana Egg Waffles

Serves: Two square waffles, one serving
  • Cooking spray or coconut oil
  • 2 eggs
  • ¼ of a banana sliced thin
  • 5 or 6 cherries, pits removed and quartered
  • Dash of cinnamon
  • Couple tablespoons of chopped walnuts {or your but of choice}
  • A drizzle of maple syrup
  1. Heat waffle iron and coat with oil or cooking spray.
  2. In a bowl crack eggs and add fruit and cinnamon, then whisk together.
  3. Pour mixture into waffle iron slowly making sure fruit is evenly distributed.
  4. Close iron carefully and allow egg waffle to cook until eggs are thoroughly cooked.
  5. Remove waffle and top with chopped nuts, extra fruit and a drizzle of maple syrup.
  6. Enjoy!!
